Our journey started with a chance encounter in a small Swiss village, where a bakery’s message spoke to us: pure sourdough, no shortcuts, just time, skill, and respect for the craft. That moment led us back to Bucharest, where we built a bakery that honors sourdough — a process that requires patience, intuition, and constant learning.
What We Do
At Gluten Glory, we don’t just bake bread—we nurture it. Every loaf is the result of a long, natural fermentation process that develops deep flavors and makes our bread more digestible. We use 100% sourdough, no industrial yeast, no additives, just flour, water, salt, and time.

Food has a way of bringing us home. Comfort food is different for everyone—it’s what we grew up with, what our families made on special days, what warms us up on a cold evening. It could be a bowl of soup, a plate of pasta, or a simple tarte flambée. But at its core, comfort food is about sharing and gathering around the table.
That’s what GG Flambée, our brasserie, is all about: simple, wholesome dishes made with care, meant to be enjoyed together. From all-day breakfasts to tartines, soups, and warm, satisfying meals, our menu is an invitation to slow down, connect, and enjoy good food in good company. At the center, is our Tarte Flambée (Flammekuchen)—a crisp, flavorful flatbread inspired by Alsatian tradition, yet perfectly at home here in Bucharest, speaking the universl language of “comfort food”.
