Alsatian Wines

The wines we serve at Gluten Glory come from a single producer: Hubert Reyser, a family winemaker from Nordheim, Alsace. Small production. Certified organic. Spontaneous fermentation with wild yeasts. No industrial adjustments.

We chose one producer deliberately. We wanted to understand what we were serving — not to offer a list, but to offer a selection we could stand behind completely.

The Producer

What Makes A Wine Organic

The word "organic" is used loosely in wine. At Hubert Reyser, it means something specific: the vines are treated only with natural substances — copper sulphate, herbal teas, compost. No synthetic pesticides, no chemical fertilisers, no herbicides. Fermentation is natural, initiated by wild yeasts present on the grape skins, not by commercial yeast additions. Sulphur additions are kept to a minimum or eliminated entirely.

The result is wine that expresses the place it comes from — the soil of northern Alsace, the particular character of each grape variety — without interference.

Method

Crémant — And Why It Is Not Prosecco

Crémant is a sparkling wine produced by the traditional method — the same method used in Champagne. The second fermentation happens in the bottle, not in a tank as with Prosecco. The wine is aged on its lees for a minimum of twelve months. At Hubert Reyser, the minimum is three years.

After fermentation, the bottles are stored upside down to allow the lees to settle near the cap. The disgorgement — removal of the lees — is done by hand. It does not carry the Champagne name because it does not come from the Champagne region. The method is identical.

The Wines

Crémant Rosé Brut — Millésime 2022
Traditional method sparkling wine from a single vintage, aged three years. Fine bubbles, good structure, no added aromatics. Natural, dry.
Crémant Blanc de Blancs 2022
Made exclusively from white grapes. Dry, very direct, high acidity, fine perlage. Suited to food pairing — this is not a sweet aperitif sparkling wine.
Sylvaner 2024
A local Alsatian variety. Dry white, acidic, fresh. No oak, no external influences — the pure expression of the grape. Suited to light dishes, vegetables, fresh cheeses.
Pinot Noir "L'Ardent" 2020
Light red, no oak, spontaneous fermentation. Soft tannins, moderate alcohol. Unfiltered. Best served slightly chilled, with light food — duck, mushrooms, white meat.
Riesling "Les 4 Vents" 2024
Dry white with the mineral character specific to Alsace, high acidity, no residual sugar. Can seem austere at first but opens in the glass. A technical wine, suited to serious food pairings.
Edelzwicker 2023
A blend of several varieties — Sylvaner, Riesling, Pinot Blanc. An everyday wine: dry, simple, balanced. No complexity, but honest.
L'Incorruptible 2024 — 8.5% alcohol
A light white wine produced with partial fermentation. Naturally sweet but not syrupy. Ideal for those who prefer a lower-alcohol wine.
Gewurztraminer — Sélection de Grains Nobles
Late harvest grapes, concentrated through botrytis or raisining, fermented slowly. A sweet, dense wine with low acidity. Ideal with hard cheeses, blue cheeses, or fruit-based desserts.
The Pairing

Why These Wines At Gluten Glory

Alsace made sense to us for the same reason Tarte Flambée made sense. We were already sourcing the oven and the base ingredients from the region. The wines follow the same logic — a single producer, a specific place, a clear point of view.

Crémant pairs naturally with Tarte Flambée. The acidity cuts through the crème fraîche. The dryness does not compete with the food. This is how they drink it in Alsace, and it works for the same reasons here.
