Not all sourdough bread is the same.

There's marketing sourdough — bread with a splash of vinegar added for that sour taste, baked quickly, sold with a nice label. And there's real sourdough — made with a live starter culture, slowly fermented for 48 hours, where time is the main ingredient. At Gluten Glory, we make the second kind.

The Process

What 48-Hour Slow Fermentation Means

Our process starts two days before the bread reaches the shelf. Our starter — a live culture of wild yeast and lactic acid bacteria — works slowly, transforming starches and gluten into something fundamentally different from industrial bread.

The result is bread with:

  • A crisp crust, naturally caramelised in the oven
  • An open, elastic crumb with visible air pockets
  • A complex, slightly tangy flavour with real depth
  • Better digestibility than conventional bread, thanks to the fermentation process

We don't add improvers, industrial yeast, or artificial flavourings. We add time.

Why The Process Matters

Time Does The Work

Slow fermentation isn't a technical detail — it's the reason our bread tastes different from most bakeries in Bucharest. The active starter breaks down phytates in the flour, makes gluten easier to digest, and develops a complex flavour profile that simply cannot be achieved by shortening the process.

Industrial bread is made in 2-3 hours. Ours is made in 48. You can taste the difference from the first bite — in the crust, in the crumb, in the flavour.

Real sourdough doesn't need improvers, because time does the work improvers would do. It doesn't need industrial yeast, because the live starter culture is the yeast. It doesn't need preservatives, because the natural acidity from fermentation preserves it naturally.

We bake every single day. There's no yesterday's bread at Gluten Glory — or if there is, we say so clearly. Our range includes white, wholewheat, and seeded sourdough loaves, alongside French viennoiserie — croissants, pain au chocolat, and pastries made with real butter, laminated by hand.

From Bakery to Brunch

Sourdough at the Heart of the Brunch Menu

Our bread isn't just a standalone product — it's the foundation of the brunch menu at Gluten Glory. NY Roll Eggs Benedict, toasts, tartines, and bistro dishes are all built around the sourdough baked every morning.

We don't use store-bought bread. Everything that reaches the plate goes through our own oven. You'll find the full brunch menu, available Monday to Friday from 8:00 and weekends from 9:00, here.
