Sourdough Bakery

Gluten Glory’s story began with a twist of fate: a ski trip to Les Arcs derailed by bad weather and a train strike. This led us to a small Swiss village for a jazz festival, where we stumbled upon a bakery sign: "Le Pain des Frouzes, Pain au levain 100% naturel." The simplicity and purity of the message sparked an idea, and soon after, a partnership with Julien and Alex, two passionate French bakers, took root in Bucharest.

Our unexpected journey became a mission to create more than just bread. We envisioned a place of community and craftsmanship, rooted in eco-responsibility and transparency. Central to Gluten Glory are our specially cultivated sourdoughs, a living expression of passion and tradition, guided by Julien and Alex.

Every product here is handmade, using only 100% natural sourdough without industrial yeast. We carefully select the finest ingredients, from French butter to local grains, forging trusted relationships with suppliers to ensure quality and authenticity. Gluten Glory is a reflection of our journey, a bakery built on values, care, and a dedication to quality and community.

Meet Our Bakers

Alex & Julien

At Gluten Glory, our team is as richly layered as the breads we bake. At the heart of our bakery are Julien and Alex – Les Frouzes, who took on the adventure calling in Bucharest. Our lab is led by our Corsican chief of production – who brings both precision and a dash of island humor. Our bakers include a mix of skilled French artisans and talented Romanian professionals. Together, we blend expertise with a spirit of continuous learning and improvement, crafting each loaf and pastry to be better than the last. Here, the kitchen is always alive with fresh ideas and a shared dedication to making authentic, quality products.

By dawn, we’re ready to welcome the day with open doors and a new batch of our handmade creations.

Our brasserie, GG Flambée, is our latest addition – a space where we celebrate breakfast and brasserie classics with a fresh, wholesome twist. From hearty breakfasts that start the day right to timeless brasserie fare, we’re reimagining beloved recipes with the same authenticity we bring to our bread.

You’ll find egg twists with creative fillings, a variety of tartines topped with ingredients that balance both flavor and nutrition, and soups that bring comfort and warmth. We also offer shared dishes, crafted to invite conversation and connection around the table. And of course, the star of the brasserie is our Tarte Flambée, also known as Flammenkuchen – a crisp, flavorful flatbread that pays homage to Alsatian tradition while bringing something new to Bucharest. GG Flambée is where we welcome you to linger, savor, and enjoy the simple pleasure of a beautifully prepared meal.
