Gluten Glory's origin story is as unique as the breads we bake. It all started when an intended ski holiday in Les Arcs took an unexpected turn due to adverse weather and a train strike, leading us on an unforeseen path.

Seeking to make the most of the situation, we ventured to a quaint Swiss village for a Jazz festival, where a bakery sign caught our eye: "Le Pain des Frouzes, Pain au levain 100% naturel. De l’eau, de la farine et du sel…rien de plus…L'art de la boulangerie française, sublimé par le terroir Suisse." This encounter ignited our curiosity and set in motion a journey that brought us together with Julien and Alex, two young and curious French bakers. Their visit to Bucharest was the catalyst for what would eventually become Gluten Glory.

Our unexpected journey was not merely a detour but an alignment with our core values and aspirations. United by a passion for genuine, high-quality bread, we aimed to create more than a bakery. Our vision was to foster a place of community and culture, rooted in the principles of eco-responsible consumption, transparency in our supply chain, and the celebration of skilled craftsmanship and sustainability.

At the heart of our bakery is our specially cultivated sourdough, a testament to the passion and care invested by Julien and Alex. This living, evolving sourdough encapsulates the essence of Gluten Glory, marrying tradition with innovation to produce breads of quality. Our commitment to craft extends to every product we offer, all handmade without industrial yeast and ensuring 100% natural sourdough authenticity. We pride ourselves on using the finest French butter and meticulously selected flours, underpinned by strong relationships with our suppliers to guarantee the integrity of our ingredients.

As the city sleeps, our bakery comes to life. The night at Gluten Glory is a time when our bakers start preparing doughs, shaping loaves, and baking.

This dedication ensures that as dawn breaks, we're ready to welcome the new day with the aroma of freshly baked goods.

Our partnership with Zissou Coffee Shop, a vibrant family of young baristas, marks the beginning of each day at Gluten Glory. Together, we bring you a selection of specialty coffees and teas, sourced with care, from both local and international suppliers. Accompanying the coffee/tea is our offering of wholesome breakfasts/brunches. Our menu reflects the same commitment to quality and passion for flavor that defines our bread.

We bake bread daily and embrace the traditional artisanship that goes into sourdough bread with added inspiration from around the world but with organic local products where possible. Each loaf is baked with care and crafted by our hands, expressing flavors of our different origins, inspired by our voyages, yet deeply rooted in our commitment to quality and authenticity.

We believe the soil matters just as much for our grains as it does for good wine. That's why we seek to find local, endemic ancient grains to help us recover some true flavors.

We stay curious and we don’t cease to experiment and to surprise ourselves in this journey.

Our commitment to quality ingredients does not end with grains. We engage directly with local orchards for seasonal fruits, ensuring a supply of fresh ingredients for our pastries.

In an era of processed foods and artificial additives, we want something different.

We believe the bakery plays a crucial role in preserving our environment and supporting local communities. By baking with natural sourdough and respecting long fermentation times, we enhance the flavor and health benefits of our baked goods, making them tasty, digestible, and less wasteful due to their longer shelf life.

Our water is filtered through activated charcoal, ensuring purity in every aspect of our baking.

We actively work towards developing a short supply chain for always more of our main raw materials.

We strongly believe in sustainable and quality agriculture, supporting a growing local community of dedicated and committed ecosystem of producers. We personally know them all, and aim to grow together, striving for lasting and fair relationships that guarantee strict quality, traceability, and seasonality of most ingredients, allowing the achievement of high-quality products in line with our needs.

This foundation of trust extends from the fields where our grains are grown to the bakery where our loaves are crafted.

Our role as artisan bakers also includes educating our customers on these issues.

Environment

Eco-Friendly From Crust to Core

Our activities generate relatively little waste, which is quickly sorted, reused, or composted. We combat waste by favoring artisanal quality, thus, the quantities of products on the shelf are limited.

Selling whole and sliced bread allows us to manage our stock efficiently, resulting in minimal unsold goods, which are collected and distributed daily to local charities. We use eco-responsible packaging solutions and daily promote reusable packaging among our staff and customers.

Our bakers commute to work walking, cycling or by public transportation. Our cleaning agents are white vinegar, black soap, and eco-friendly dish soap. At our modest scale and with all humility, we shape bread and pastries while minimizing the environmental impact of our activity.

Even the seeds we sweep away find purpose, serving as nourishment for our feathered friends.
