The wines we serve at Gluten Glory come from a single producer: Hubert Reyser, a family winemaker from Nordheim, Alsace. Small production. Certified organic. Spontaneous fermentation with wild yeasts. No industrial adjustments.
We chose one producer deliberately. We wanted to understand what we were serving — not to offer a list, but to offer a selection we could stand behind completely.
The word "organic" is used loosely in wine. At Hubert Reyser, it means something specific: the vines are treated only with natural substances — copper sulphate, herbal teas, compost. No synthetic pesticides, no chemical fertilisers, no herbicides. Fermentation is natural, initiated by wild yeasts present on the grape skins, not by commercial yeast additions. Sulphur additions are kept to a minimum or eliminated entirely.
The result is wine that expresses the place it comes from — the soil of northern Alsace, the particular character of each grape variety — without interference.
Crémant is a sparkling wine produced by the traditional method — the same method used in Champagne. The second fermentation happens in the bottle, not in a tank as with Prosecco. The wine is aged on its lees for a minimum of twelve months. At Hubert Reyser, the minimum is three years.
After fermentation, the bottles are stored upside down to allow the lees to settle near the cap. The disgorgement — removal of the lees — is done by hand. It does not carry the Champagne name because it does not come from the Champagne region. The method is identical.
Alsace made sense to us for the same reason Tarte Flambée made sense. We were already sourcing the oven and the base ingredients from the region. The wines follow the same logic — a single producer, a specific place, a clear point of view.
Crémant pairs naturally with Tarte Flambée. The acidity cuts through the crème fraîche. The dryness does not compete with the food. This is how they drink it in Alsace, and it works for the same reasons here.
