The Space

Gluten Glory is not just a bakery. It's a restored industrial space in northern Bucharest — designed around visibility, production, and the idea that the process of making food is worth watching.

The counter runs the length of the ground floor. Behind it, the laboratory/bakery is visible. Behind the counter, the bread rack and the bread oven. The logic is simple: if you're making something worth eating, you should be comfortable showing how it's made.

On the first floor, the same logic applies. The kitchen is open — the process is transparent. You can interact directly with the chefs, see the work counter, the fridges. All in the open.

The Building

The Architecture

The building at Strada Copilului 20A had a previous life before Gluten Glory. It used to be a production hall, for textiles. The intervention preserved the industrial character of the space — exposed structure (in the original terrazzo, you can still see the holes where the old machines used to be mounted), functional materials, honest finishes — while creating an environment that works equally well for a solo coffee at 8am and a family brunch on Sunday.

The space was entirely stripped down and redone to go back to its industrial look & feel.

In 2025, the project was nominated at the Bienala Națională de Arhitectură in the category Reabilitarea și Reconversia Clădirilor — alongside projects including Cinema Studio and the Intercontinental Athenee Palace renovation.

The space was also featured in igloo's Cafe Design — Restaurant Design publication, September 2025.

Layout

Two Floors. Two Rhythms.

The ground floor is the bakery — bread, viennoiserie, coffee, the counter. It moves fast in the morning and slows down by mid-afternoon.

The first floor is the bistro — brunch service, longer tables, the full menu. It fills up on weekends. On weekdays it's calm enough to work from.

Both floors share the same kitchen. Nothing is reheated.
